One of the challenges of having the kids home all the time, is keeping meals healthful, yet interesting. You simply (at least I can't get away with this in my home!) slap together a PB&J for every lunch everyday. They get sick of it! One advantage of public school I suppose would be a variable menu with nice hot food everyday. I want to share some of my lunch making ideas that my kids love. My hope is that some of you would share your lunch making creativity with me and everyone to help us all come up with better ideas. Iron sharpens iron!
Here's one easy one my kids love:
Kid Quesadillas
You need:
*2 flour tortillas per kid
*some refried beans
*your kids' favorite type of cheese (we use cheddar)
*anything else that your kids like (lunch meat, chicken, beef, etc.)
What to do: On one tortilla slap on some refried beans and spread thinly (if you use too much, it spills out everywhere later). Sprinkle with grated or shredded cheese. Add whatever else you like or your kids like (I eat this too!) Top with other tortilla. Heat in a large fry pan or griddle until cheese is melted and tortillas are a little bit browned. (You do have to flip it!) Cut into pizza type triangles. Serve with sour cream, lettuce and tomato if applicable. This is a fun one to let the kids help make.
So with this recipe, I can make one kid quesadilla, then I cut it in half for Lucy to share with Harrison, since they are both going through an eat nothing phase. Lane eats a whole one with JUST BEANS on it. He's so picky. Lu and Harrison mostly love the sour cream that I serve it with. It's fast, easy, and I like it too. We also sometimes make these with just cheese and cut up lunch meat without any beans. Still delicious! Still popular!
